Although there are very few applications available making use of touch interface for now. I recently came across this link where Nokia has made available some free applications for use wit Nokia 5800 XM. You can download the set of free applications here. Most of them are games.
I could not resist and have tried almost all the applications. Most games are from Activate and all of them have UI scalability issues. You can find the applications here.
